Baked Cinnamon "Apples"

When your (awesome) health plan calls for a vegetable, but you're in the mood for sweet, have both!  We're having fun making jicama in different ways. (See our chili cheese jicama fries!) Our favorite might be fried like potatoes. So good!  We also love these Baked Cinnamon "Apples" using jicama. We're really enjoying learning new, healthy, yummy recipes!
Never heard of jicama? We hadn't either. :)  It's a root vegetable that tastes somewhere between a potato and an apple. We like it raw too!
