Desert National Wildlife Refuge

We moved to a new spot for the week and are loving our snowy mountain views in Desert National Wildlife Refuge!! It's hard to believe this is just outside of Las Vegas. Peaceful, quiet, beautiful, and dark night skies! The view from my office window. I think I'll do a lot of writing! The view from Allen's office!  I'm sure sunsets will be awesome too! 

Baked "Breaded" Chicken

We loved this one! The family said it tasted like KFC! Healthy, breaded (kinda) chicken? Yes! I combined about 18 different recipes, trying to come up with a yummy chicken that was still healthy, and finally nailed it. :) *Click here for the same recipe made with an air fryer ! Baked "Breaded" Chicken Recipe  4 Boneless Skinless Chicken Breasts 1 egg Parmesan Cheese Salt Pepper Paprika Olive Oil 1. Pound the chicken thin (1/3"). Save time, space, and mess by first placing chicken inside a gallon freezer bag to pound. Set aside in bag. 2. Preheat oven to 350°F. 3. Pour 1/4 cup parmesan into a bowl and sprinkle with salt, pepper, and paprika. 4. Whisk egg and pour into the bag of chicken. Squish chicken around until fully coated. 5. Drizzle olive oil in a skillet on a stovetop until so it's well coated and slowly heat the oil. 6. Remove one coated chicken breast and place into cheese bowl. Coat both sides. 7. What would you do if your calendar wasn't full? No school, carpool, work, commuting, sports, dance, scouts, band, clubs, homework, playdates, errands, yardwork, house maintenance, bill paying, or community meetings ? Our Story

Our family of five has been traveling the country since 2010 and we still love the total freedom of our fulltime RVing life! We’ve seen 49 states, visited over 70 national parks, and experienced countless adventures on the road. And we’re passionate about helping others find that freedom too.  Many ask us how we make money on the road and are looking for mobile income options. I share a link to some ideas here  and much more about this in our book, Unlocating . We've done a variety of things, but nothing compares to our current job. Here's how we found it.  While life is great now, in 2014-2015 we really slowed down. We had never had a home base before, but for those two years we sat still for the majority of the year. We bought some land and it was beautiful, but we didn’t do very much because we simply didn’t feel like it. We thought we’d lost our sense of adventure.
