Air Fryer "Breaded" Chicken

I've been using my new Mealthy CrispLid and loving it! I've wanted an air fryer, for healthier cooking, but hated to have yet another appliance in our small kitchen. So I'm glad I took a chance on this lid, because it's perfect for us! This time I tried my trusty (and yes, healthy) baked "breaded" chickenin the air fryer/Instant Pot and it was great! And I didn't have to fry it and then bake it!
I just coated and hit start! I was able to do three at a time in the basket. One and a half each was perfect for Allen and me (6oz for a lean & green dinner), but I made more to have the next day too. Matt wasn't home because he pretty much lives with his friends the Albrittons now. :) He's loving his friend time in Florida!  

Air Fried "Breaded" Chicken Recipe with the CrispLid
4 Boneless Skinless Chicken Breasts
1 egg
Parmesan Cheese
Salt
Pepper
Paprika
Cooking spray

1. Pound the chicken thin (1/3"). Save time, space, and mess by first placing chicken inside a gallon freezer bag to pound. Set aside in bag.
2. Pour 1/4 cup parmesan into a bowl and sprinkle with salt, pepper, and paprika.
3. Whisk egg and pour into the bag of chicken. Squish chicken around until fully coated.
4. Spray air fryer basket with cooking spray and place on rack in unplugged Instant Pot.
5. Remove one coated chicken breast and place into cheese bowl. Coat both sides.
6. Add each "breaded" chicken breast to the basket in a single layer. Do in batches if needed.
7. Place CrispLid on Instant Pot and cook at 400°F for 12-15 minutes, flipping halfway through.
Serve with vegetables for a full Lean & Green meal.
I really love that you can see your food and check on it while it's frying.
