Air Fryer "Breaded" Chicken

I've been using my new Mealthy CrispLid and loving it! I've wanted an air fryer, for healthier cooking, but hated to have yet another appliance in our small kitchen. So I'm glad I took a chance on this lid, because it's perfect for us! This time I tried my trusty (and yes, healthy) baked "breaded" chicken in the air fryer/Instant Pot and it was great! And I didn't have to fry it and then bake it! I just coated and hit start! I was able to do three at a time in the basket. One and a half each was perfect for Allen and me (6oz for a lean & green dinner), but I made more to have the next day too. Matt wasn't home because he pretty much lives with his friends the Albrittons now. :) He's loving his friend time in Florida!   Air Fried "Breaded" Chicken Recipe with the CrispLid 4 Boneless Skinless Chicken Breasts 1 egg Parmesan Cheese Salt Pepper Paprika Cooking spray 1. No office, no problem

Even though we live and work in a small space, we can still have a professional looking office in an RV! We often do video chats and we want to put our best foot (face) forward. These backdrops simply hang from the ceiling in Allen's office, aka our living room, aka our kitchen, aka the path to the kids' rooms, aka the *everything* in a fifth wheel. Now we can work, and focus on helping others, without all the distractions. They also hang from the ceiling in my office, aka our bedroom. We used tri-fold cardboard for displays. Then we covered them with peel and stick wallpaper for the plain wall and a giant wall poster for the window view. We can also cover them with a sheet for a green screen. No background distractions, besides our goofy faces. We can't always have an office this gorgeous - but we're very grateful when we do!! Even if it's moving day, and we're parked at a rest area, we can still work from a professional office. Do you have ...

Our Story

Our family of five has been traveling the country since 2010 and we still love the total freedom of our fulltime RVing life! We’ve seen 49 states, visited over 70 national parks, and experienced countless adventures on the road. And we’re passionate about helping others find that freedom too.  Many ask us how we make money on the road and are looking for mobile income options. I share a link to some ideas here  and much more about this in our book, Unlocating . We've done a variety of things, but nothing compares to our current job. Here's how we found it.  While life is great now, in 2014-2015 we really slowed down. We had never had a home base before, but for those two years we sat still for the majority of the year. We bought some land and it was beautiful, but we didn’t do very much because we simply didn’t feel like it. We thought we’d lost our sense of adventure. We’d done so much and figured maybe we had just seen it all and we were finished. We settled into...

Park City, Utah

The Johnsons drove us to the airport, and since we're all adventurers, we decided to explore Park City first. It's a very cool town and we checked out some Olympic sites too. We'll miss these mountains!  Jack was SO happy to see Allen after a week.  He looked at me like he dared me to separate them ever again. :)

Sundance, Utah

We had an amazing and challenging leadership retreat at the gorgeous Sundance Resort in Utah. We stayed in a really fun, quirky log cabin with the Johnsons. We had a wonderful time soaking up all the training and being around so many amazing leaders, all with this beautiful Fall backdrop. What a team!  The resort was decked out for Halloween and this scary guy on the mountain was really cool!  Our cabin was fascinating and adorable!  Ryan stayed with the kids and they went to a super scary haunted house and had a blast!

Allen's too small for his kayak :)

Since Allen lost 65 pounds, he's way under the weight range for his kayak. So he bought a shiny new Jackson Rockstar! They had to try it out at the whitewater park. Everyone loves it!

2016 Convention

After Colorado, we headed down to Austin, Texas for our health coaching convention. We hadn't honestly looked forward to it, because we've done SO many conventions. But we trust our coaches, plus had many people we wanted to meet, and we are SO glad we went! It was AMAZING! And so VERY different from any convention we've been to. We've never been surrounded by such positivity and happiness, ever. We'll certainly never miss one in the future! Suit shopping with Allen was amusing. He was WAY to small for his old one. :) We earned a special reception to start the week off and got to meet Dr. A. and Mona.  We had a fun dinner with our team. Lots of meat on sticks! :)  Allen had too much. :)  The convention was exciting and inspiring.  The fuelings aren't just yummy, they're great for you too!  It's fun to see Hyrum and Tiana on stage showing their excitement over the upcoming trip to Costa Rica!  Part of our team with Dan Valentine....
