Air Fryer "Breaded" Chicken

I've been using my new Mealthy CrispLid and loving it! I've wanted an air fryer, for healthier cooking, but hated to have yet another appliance in our small kitchen. So I'm glad I took a chance on this lid, because it's perfect for us! This time I tried my trusty (and yes, healthy) baked "breaded" chicken in the air fryer/Instant Pot and it was great! And I didn't have to fry it and then bake it! I just coated and hit start! I was able to do three at a time in the basket. One and a half each was perfect for Allen and me (6oz for a lean & green dinner), but I made more to have the next day too. Baked "Breaded" Chicken

We loved this one! The family said it tasted like KFC! Healthy, breaded (kinda) chicken? Yes! I combined about 18 different recipes, trying to come up with a yummy chicken that was still healthy, and finally nailed it. :) *Click here for the same recipe made with an air fryer ! Baked "Breaded" Chicken Recipe  4 Boneless Skinless Chicken Breasts 1 egg Parmesan Cheese Salt Pepper Paprika Olive Oil 1. Pound the chicken thin (1/3"). Save time, space, and mess by first placing chicken inside a gallon freezer bag to pound. Set aside in bag. 2. Preheat oven to 350°F. 3. Pour 1/4 cup parmesan into a bowl and sprinkle with salt, pepper, and paprika. 4. Whisk egg and pour into the bag of chicken. Squish chicken around until fully coated. 5. Matt is 13!

Now that Matt is 13, we have all teenagers. (Yikes!)  He requested an ice cream cake again. And we had a big shooting day. They tore up a case of clay pigeons!  We surprised him with a special (secret) gift for 13 year old boys and he was a little excited. :)  It was a good day!

Sour cream, so easy!

Why did I not know how easy it was to make sour cream? You literally just take cream... and let it sour. Sheesh!  Our neighbor had extra cow milk (our goat milk is creamy, but doesn't separate as easily), so I looked up making sour cream and couldn't believe how easy it was. Seriously, let your milk sit out overnight. Done!  That's really it. If your family is curious, you might make a mean sign.  Then scoop off the cream.   With the rest of the milk you can make cottage cheese and whey too. 

Strawberry cheesecake chimichangas

We saved our strawberries until we had enough for a recipe, then found the perfect one to make: Strawberry Cheesecake Chimichangas !  They were easy and so so good!  

Homemade Crunchwrap Supremes

I miss Taco Bell.  I'm sure it's healthier that there's not one within an hour of here, but I sure miss it!  Especially crunchwraps.  So when I saw this recipe for crunchwrap supremes , I dropped everything and tried it. Wow!  Super easy and so yummy.  Try it. You're welcome!  :)

Goat pedi, escaped bunny, clever cat, fried squirrel

Lily got a pedicure today, on the trampoline to keep the dirt away.  She's wearing Entice Blue. It's all the rage in the goat yard.  :)   Gypsy figured out how to escape today. Maybe she learned from Houdini the chick?  She didn't go far though, just waited on Matt to take her back.  So Josh decided to keep Toast company while Matt put Gypsy in a more secure cage.  Tonight Matt said, Um Mom, Walker Kitty's opening the door.   We shooed her away, but she kept climbing, so of course I took pictures.  She figured out that latch pretty easily. We had some yummy fried then baked squirrel tonight!   It called for a rack inside a shallow pan.  Since we have neither, I had to be creative.  I used canning jar lids and tin foil with holes.  It worked out fine.  The squirrel was super tender with a crispy coating, just right!  Yeah, pretty much like chicken. 

Matt is 12!

We asked Matt what we were going to do about his birthday.  It's always awesome, Mount Rushmore , Grand Canyon , Niagara Falls , and Glacier National Park , but this year we're just here in Arkansas.  He said, "But this farm is totally AWESOME!" which sure made us happy to know he's happy.  :) He was pretty excited to get a cup of coffee.  Matt requested an ice cream cake, so I tried this amazing recipe .  We'll definitely have it again!  This was a favorite moment of mine today, watching Lily follow Matt around the RVstead. 

Buckeye Casserole

This is Allen's recipe that we always make for Buckeyes games and it's usually a big hit, so we call it Buckeye Casserole . Mix in a large bowl: - 1 can cream of mushroom soup (or homemade ) - 1 can cream of chicken soup (or homemade ) - 2 large chicken breasts cooked/diced (or homemade !) - 1 can refried beans (or homemade ) - 1 small jar salsa In a casserole dish, place a thin layer of crunched tortilla chips . Pour half of the above mixture over chips. Cover with 1-2 cups shredded mozzarella cheese . Layer chips again, then rest of the mixture, then cheese. Layer a few more chips (crushed or in rows), then cheese on top. Bake @400 for 15-20 minutes. Enjoy and GO BUCKS! Sometimes we get fancy for a big game. Rarely though, because it gets eaten so fast it's hardly worth the time. :) 

Tortillas and horror music

It may sound like a strange combination, but our new tortilla maker makes lovely tortillas and also great sound effects for a horror movie.  All the kids noticed that right away, scary music!  Quite weird (the kids and the music), but we sure love our always round homemade tortillas for lunch with our way too easy homemade refried beans !

New River Gorge

We made the annual Memorial Day kayaking trip to the New River Gorge.  This is one of the first kayaking trips of the year for the Dayton OAC and we were happy to reconnect with our friends from Ohio, Kentucky, and Pennsylvania - in West Virginia.  Oddly enough, though we were camped two miles from our very favorite spot, the New River Gorge bridge, we never made it down to the bottom.  Allen kayaked the Meadow, New, and Gauley rivers, while the kids and I enjoyed the perfect spot he found the first day on the Meadow.  Cliff jumping and rope swings!  I sat in a kayak and took pics, and was the safety boater in case they needed me. They didn't (beyond a slight belly-smacker that took Matt's breath away). Videos at the end! Jack the dog did some swimming and exploring too.  He didn't seem to want to jump though.     Lizzy pretty much stood on this rock all day and called it fun.  She does that.
